Sweet and Salty Oatmeal Cookies

I love oatmeal cookies. And I love cookies with brown butter. And I love peanut butter cookies. (Okay, I love all cookies!) Last week I wanted some cookies but had limited ingredients to work with. This recipe — which I am honestly going to make all the time!! — was created. 

Sweet and Salty Oatmeal Cookies

Wet Ingredients

  • 4 Large Eggs
  • 2 Tablespoon Vanilla
  • 1 Cup Butter – Browned

Dry Ingredients

  • 2.5 Cups Flour
  • 2 Cups Oats
  • 1 Cup Coconut Flakes
  • 1 Cup Chopped Walnuts
  • 1 Tablespoon Cinnamon
  • 2 Teaspoon Baking Soda
  • 1 Cup White Sugar
  • 1 Cup Brown Sugar
  • 2 Teaspoons Salt
  • 1 Cup Powdered Peanut Butter

Making Sweet and Salty Oatmeal Cookies

  1. Brown room temperature butter in sauce pan over medium heat. (This is the method I used.)
  2. Once browned, pour into bowl and let cool.
  3. Combine all dry ingredients in large mixing bowl. Set aside.
  4. Once cool, combine sugar, vanilla and browned butter. Mix.
  5. Add in 4 eggs to sugar butter mixture. Mix.
  6. Add sugar mixture to the large mixing bowl with dry ingredients. Mix until just combined.
  7. Cover bowl with plastic wrap or a tea towel and place in fridge for 30 minutes.
  8. Preheat oven to 350°
  9. After 30 minutes, take dough out of fridge and roll into balls. Roughly 2 tablespoons of dough/ball.
  10. Place on cookie sheet, but DO NOT PRESS DOWN.
  11. Sprinkle a little flakey salt on top.
  12. Bake for 14-16 minutes.

If you don’t have powdered peanut butter, use regular creamy PB and reduce eggs by two. The peanut butter will add the extra moisture and fat provided by the eggs.
